Cheddar Corn Bread

Who says that bakers can't do savory? I love making corn breads for dinner and I like playing around with different ingredients and adding different components to the bread. This bread is perfect for dinners and goes great with Mexican inspired dishes. Corn Bread is easy to make and only takes a few simple steps. So add this to your next dinner plan!


 Cheddar Corn Bread:
1 cup of yellow corn meal
1/2 cup of all purpose flour
1 tsp of baking powder
3/4 tsp of sugar
1/2 tsp of baking soda
1 1/4 tsp of salt
1 1/4 cup of buttermilk
2 eggs
3 tbs of melted unsalted butter
1 1/2 cups of frozen corn kernels
1 cup of sharp cheddar cheese
First, preheat your oven to 400 and spray a pan with baking spray. Then, in a bowl, mix together the corn meal, flour, sugar, baking soda, baking powder, and salt.
Then, add the buttermilk, eggs, and melted butter and mix until well combined.
Then, add the corn and the cheddar cheese and mix until combined.
Then, pour the mixture into your pan.
Then, bake for about 40 minutes or until a fork comes out clean.

Banana Bread

I have posted different types of banana breads on this blog and they are all yummy and moist. Those recipes though were different types of banana bread with fruit or using healthier ingredients as substitutes. This recipe is banana bread in it's purest form. This is just plan old delicious banana bread. This bread is moist and sweet and simple to make. This is perfect for a brunch or an anytime treat. I decided to make this recipe because my family has a bad habit of buying bananas and then not eating them. Four perfectly good bananas got way too ripe for regular snacking, but were absolutely perfect for banana bread.
1/2 cup of unsalted butter
1 cup of sugar 
2 eggs, beaten 
4 ripe bananas 
1 1/2 cups of all purpose flour 
1 tsp of baking soda 
1/2 tsp of salt 
1/2 tsp of vanilla extract
First, preheat your oven to 350 and spray your bread pan with vegetable oil spray. Then, beat the butter and the sugar in your mixer until creamy. 
Then, with a fork crush the bananas finely. 

Then, add the bananas and the beaten eggs to the sugar mixture and beat until combined.
Then, in a separate bowl mix together the flour, baking soda, and salt until combined.
Then, add the flour mixture to the wet ingredients and mix until combine.
Then, add the vanilla extract and mix until combine. 
Then, pour the mixture into the bread pan.
Then, bake for 60 minutes or until a knife comes out clean. 
Then, let it cool and remove it from the pan.

Strawberry Chocolate Chip Muffins

Yet again, I am a muffin addict and I love the flavor combination of strawberry and chocolate. It is sweet and decadent and perfect in every way. These muffins are simple and delicious and are perfect for breakfast or an anytime snack. I made these for my sister as a great breakfast before taking her final exams. Fresh strawberries always bring a sweetness and a brightness to any treat.
Strawberry Chocolate Chip Muffins: Makes 11
1 1/4 cup of all purpose flour
1/2 tsp of baking soda
1/2 tsp of cinnamon
1/4 cup of sugar
1/4 cup of light brown sugar
1/2 cup + 2 tbs of unsweetened applesauce
1 egg beaten
2/3 cup of diced strawberries
1/3 cup of chocolate chips
First, preheat your oven to 350 and spray your muffin tins with vegetable oil. Then, mix together the flour, baking soda, and cinnamon.
Then, in a separate bowl, whisk together the sugar, brown sugar, and applesauce. 
Then, whisk in the beaten egg. 
Then, mix the wet ingredients with the dry ingredients and mix until combined. Don't over mix! 
Then, mix in the strawberries and chocolate chips. 
Then, scoop the batter into the muffin tins. 
Bake for 15-20 minutes or until a toothpick comes out clean.

Cinnamon Sugar Muffins

I am a muffin addict and I love putting new flavors into muffins. I love cinnamon sugar, so I thought why not put that into a muffin. These muffins came out delicious and full of cinnamon sugar goodness. They are pretty simple and will leave your mouth watering. You even top them with a cinnamon sugar topping which adds even more flavor. I made these for Mother's Day and they were a hit with my family.
Cinnamon Muffins: Makes 12
2 cups of all purpose flour 
1 tbs of baking powder 
1/2 tsp of baking soda 
1/2 tsp of salt 
2 eggs 
1 cup of vanilla yogurt (Don't get non fat) I used two Yoplait vanilla yogurt cups.
2/3 cup of light brown sugar 
5 tbs of vegetable oil 
1 tsp of vanilla extract 
1 1/2 tsp of cinnamon 
First, preheat your oven to 400 degrees and grease your muffin tins with vegetable spray. Then, mix together the flour, baking powder, baking soda, and salt.  
Then, in another bowl whisk together the eggs, yogurt, brown sugar, vegetable oil, vanilla extract, and cinnamon until well combined. 
Then, add the wet ingredients to the dry ingredients and best together until moistened. Do not over mix. 
Then, add the batter to the muffin tins evenly. 
Then, bake the muffins for about 12 minutes or until a toothpick comes out clean. 
While the muffins are baking, make the topping. 
1/4 cup of melted butter 
1/2 cup of white sugar
1 tsp of cinnamon 
Mix the cinnamon and the sugar together. 

While the muffins are hot, dip the top of the muffins into the butter and then the cinnamon sugar.
