Cranberry Orange Muffins with an Orange Glaze


November is here, and it is the perfect time to bake your favorite fall recipes. I love a good muffin and a good breakfast. I also love fall flavors and cranberries are an amazing fall flavor that creates delicious treats. Cranberries are tart and vibrant. They mix very well with orange flavor, because the orange cuts a little bit of the tartness. These muffins are so delicious and the orange glaze on top adds even more sweetness to balance out the tartness of the cranberries. This recipe is super simple and even more delicious. It is perfect for a fall morning breakfast with your family.  If you have never used fresh cranberries in your cooking or baking I suggest that you do. They bring so much to a recipe.
Cranberry Orange Muffins: Serves 12 
2 cups of all purpose flour (plus 2 tsp to coat the cranberries) 
1 1/2 tsp of baking powder
1/2 tsp of salt
2 cups of fresh cranberries
1 stick of unsalted butter
1 cup of sugar 
2 large eggs
2 tsp of vanilla extract
zest of one orange 
1/2 cup of milk 
First, preheat the oven to 375 and spray the muffin tins with baking spray. 
Next, mix together the flour, baking powder, and salt. 
Then, put the two teaspoons of flour on the washed and dried cranberries and mix them together. 
Then, in a standing mixer, cream the butter and the sugar until combined. 
Next, add the eggs, add them in one at a time, mixing in between. Make sure you completely combine each egg into the mixture before adding the next egg
Then, add the vanilla extract and the orange zest and mix until combined.
Next, add the flour mixture, alternatively with the milk and mix until combined. 
Then, fold in the cranberries. 
Then, fill the muffin tins with the mixture about 3/4 of the way full. 
Then, bake the muffins for about 20 minutes or until a toothpick comes out clean. 
Next, you make the sweet orange glaze to put on top. You want to put the glaze on top while the muffins are still a little warm. The glaze is super easy. It only has two ingredients and you just simply mix them together.
Orange Glaze:
2 1/4 tbs of juice from the orange you used the zest from 
1 cup of powdered sugar 
All you do is mix them together until they are fully combined. 
Next, drizzle the glaze on top of the warm muffins. 
Then, enjoy these yummy fall muffins! :)
