Corn Bread

I was making stuffed peppers for dinner tonight and was in a baking mood so I decided to make some corn bread, because what could go better with stuffed peppers?! I love baking anything, even  savory baked goods like corn bread. I have always been a fan of corn bread because of the light taste of sweetness and how it is still hearty while being light and airy. This recipe is really simple and anyone could make this for their next dinner. This corn bread is super delicious and something you should definitely try. As I always say homemade is always better, and you should try this recipe next time before using a boxed corn bread.
Corn Bread:
1 cup of milk 
1/4 cup of melted unsalted butter
2 eggs
1 1/4 cup of yellow cornmeal 
1 cup of all purpose flour
1/3 cup of sugar
1 tbs of baking powder
1/2 tsp of salt 
First, preheat your oven to 400 and grease with baking spray a 9.5 inch round pan. Then, whisk together the milk, melted butter, and eggs.
Then, add the cornmeal, flour, sugar, baking powder, and salt and stir until combined. The batter will be lumpy. 
Then, pour the batter into the pan. 
Bake for 20 minutes or until a toothpick comes out clean.

Blueberry Banana Bread

As you should know by now I am a sucker for breads. I am a big advocate for breakfast and brunch. I love making banana bread because it is so sweet and an easy breakfast/brunch dish to make. It also helps that banana bread is delicious and moist. I like to spice things up with my banana breads and that is why I added fresh blueberries. They add a tart taste and burst of yummy flavor. Any time I can add fresh fruit to something, I do because I am a lover of fruit and all of it's flavor.
Blueberry Banana Bread:
4 ripe bananas 
1/3 cup of melted butter
1 cup of sugar 
1 egg 
1 tsp of vanilla extract
1 tsp of baking soda 
1/4 tsp of salt 
1 1/2 cup of all purpose flour 
3/4 cup of blueberries 
First, preheat your oven to 350 and spray a bread pan with baking spray. Then, smash the bananas in a large bowl.
Then, add the melted butter to the bananas and mix.
Then, add the sugar and the egg and mix together, 
Then, add the vanilla extract and mix. 
Then, add in the baking soda, salt, and flour and mix together. 
Then, fold in the blueberries. 
Then, pour the mixture into the bread pan. 
Then, bake for an hour or until browned. 

Then, let it cool for a little bit and remove it from the pan. 


Then, enjoy!! :)

Oreo Cheesecakes

My boyfriend loves Oreos and he loves Cheesecake, so for part of his Valentine's Day present I made him delicious Oreo Cheesecakes. I will pretty much use any excuse to bake new things. I am not exaggerating when I say that baking is my life passion. It makes me feel complete. My hope for this blog is that some of you will find the inner baker inside of you. These cheesecakes take a little time, because with all cheesecake recipes you have to allot time for refrigeration. So make these in advance for anything you are planning to bake them for. They are creamy and of course full of Oreo cookies, and really what could be better.
Oreo Cheesecakes: Makes 12
For the Crust: 
10 Oreo Cookies (put into the food processor and made into crumbs)
1 tbs of unsalted butter softened 
For the Filling:
12 oz of cream cheese
1/2 cup of sugar
1 tsp of vanilla extract
1 egg
3/4 cup of Oreo cookies( crush them a little) You can use as many Oreos as you want. If you want more or less, it doesn't matter.
Whipped Cream:
8 oz of whipping cream
1 tbs of sugar
1/2 tsp of vanilla extract
First, preheat your oven to 350 and spray vegetable oil on your cupcake tins. 
Then, place the Oreos for the crust into the food processor and combine until they are crumbs. 

Then, add the butter to the bowl and combine,
Then, press down the crust into the bottom of the cupcake tins. 
Bake the crust for 5 minutes.
Then, make the filling. In a mixer, mix together the cream cheese and the sugar. 
Then, add in the vanilla and the eggs, and mix until well combined, 
Then, add the Oreos and mix until combined. 
Then, scoop the mixture into the tins on top of the crust about 3/4 full. 
Then, bake them for about 17 minutes or until a toothpick comes out clean. 

Then, let them cool for a little bit and remove them from the tins. 



Then, make the whipped cream. Pour the whipping cream into the mixer and beat until it becomes stiff like whipped cream. Then, add in the vanilla extract and the sugar and mix until well combined and stiff. 
Then, put the whipped cream on top of the cheesecakes.
Then, I topped mine with a piece of Oreo. Then, keep them refrigerated.

Red Velvet Cake Balls

So it was Valentine's Day weekend, a perfect excuse to bake. Nothing says Valentine's Day more than Red Velvet and bite sized goodies to share with the people you love. To me baking is all about love, passion, and sharing that love and passion with others. That is also what Valentine's Day is all about. I wanted to make something that I could share with lots of people and cake balls are the perfect thing because they are delicious and they make a lot. Next Valentine's Day, look no further than these to impress your special Valentine.
Red Velvet Cake Balls:
Red Velvet Cake: You need to make the cake first. 
2 1/2 cups of all purpose flour
1 1/2 cups of sugar
1 tsp of baking soda 
1 tsp of salt
1/4 cup of unsweetened cocoa powder
1 1/2 cups of vegetable oil
1 cup of buttermilk
2 eggs
2 tbs of red food coloring
1 tsp of white distilled vinegar
1 tsp of vanilla extract
First, preheat your oven to 350 and spray a cake pan.
Then, mix together in a bowl, the flour, sugar, baking soda, salt, and the cocoa powder.
In your mixer, mix together the vegetable oil, buttermilk, eggs, red food coloring, white vinegar, and the vanilla extract. 
Then, add the dry ingredients to the wet ingredients and mix until well combined.
Then, pour it into your cake pan. 
Then, bake for about 35 minutes or until a toothpick comes out clean. 
Let the cake cool for a bit and then crumble it into pieces in a large bowl. 
Next, make the cream cheese icing. 
Cream Cheese Icing:
8 oz of cream cheese
2 cups of powdered sugar
1/2 cup of unsalted butter
1 tsp of vanilla extract
First, mix together the cream cheese and butter until well combined and creamy. 
Then, mix in the powdered sugar and the vanilla until well combined. 

Then, mix 3/4 of the icing into the red velvet cake crumbs.
Then, form the mixture into ball shapes and place them on a cookie sheet and let them refrigerate for a couple hours until they harden a little.
Then, melt white chocolate or vanilla candy. I use the microwaveable kind. Then, using two forks dip the red velvet cake balls into the chocolate.

Then, refrigerate them and enjoy!
