Pumpkin and Chocolate Chip Muffins

It is that time of year: Fall! In celebration of October finally starting (my favorite month), I was of course in the mood to bake with pumpkin. Pumpkin is THE fall flavor that everyone loves. Pumpkin gets me excited about fall and baking. There is just something about the aroma of pumpkin baking in the oven, especially mixed with some chocolate chips. These muffins are so quick and easy and are delicious. A perfect way to start your morning or to have an anytime treat. They have the perfect amount of spice and chocolatey goodness.What could be better?! Trust me you should make these, they will be a hit for whoever you make them for.

Pumpkin and Chocolate Chip Muffins recipe:
Makes 2 dozen
4 eggs
2 cups of sugar
1 can of pure pumpkin puree
1 1/2 cups of vegetable oil
3 cups of flour
2 tsp of baking soda
1 tsp of baking powder
1 1/4 tbs of pumpkin pie spice
1 tsp of salt
Chocolate Chips (As much or as little as you like)
Preheat the oven to 400 and place liners in a muffin tin.
In a mixing bowl, beat the eggs, sugar, pumpkin, and oil until combined.
Next, mix together the flour, baking soda, baking powder, pumpkin pie spice, and salt.
Add the flour mixture little by little into the pumpkin mixture and mix until combined. 
Next,with a spoon mix in the chocolate chips. 
Fill the muffin liners almost all of the way full. 
Bake the muffins for about 16 minutes or until a fork comes out clean.
